چکیده
In this paper, a new approach for adaptive linearizing control of continuous fermentations with immobilized yeasts Saccharomyces cerevisiae BO 213 was proposed. Three fermentations with three different procedures of cells immobilization were investigated. The switching from batch to continuous mode of cultivation was realized automatically in time when the ethanol production rate reaches its maximal value. This information was received by software sensor of ethanol production rate. The proposed control algorithm stabilizes the concentration of ethanol in the culture medium at value corresponding to maximal ethanol production rate. The simulation results are promising and could be verified in laboratory conditions. Key-Words: adaptive control, monitoring, alcohol fermentation, continuous process, immobilized yeast

The immobilization of Saccharomyces cerevisiae DSM 70424, Saccharomyces ludwigii DSM 3447 and Saccharomyces rouxii DSM 2531 on brewer's spent grain and then ethanol production and sugar consumption of these immobilized yeasts were investigated. The aim of this study was to investigate the abilities of these three immobilized yeasts for producing alcohol for brewing at two temperatures (7 and 12...

متن کاملSequential Fermentation with Selected Immobilized Non-Saccharomyces Yeast for Reduction of Ethanol Content in Wine
The average ethanol content of wine has increased over the last two decades. This increase was due to consumer preference, and also to climate change that resulted in increased grape maturity at harvest. In the present study, to reduce ethanol content in wine, a microbiological approach was investigated, using immobilized selected strains of non-Saccharomyces yeasts namely Starmerella bombicola...
متن کاملStarmerella bombicola influences the metabolism of Saccharomyces cerevisiae at pyruvate decarboxylase and alcohol dehydrogenase level during mixed wine fermentation
BACKGROUND The use of a multistarter fermentation process with Saccharomyces cerevisiae and non-Saccharomyces wine yeasts has been proposed to simulate natural must fermentation and to confer greater complexity and specificity to wine. In this context, the combined use of S. cerevisiae and immobilized Starmerella bombicola cells (formerly Candida stellata) was assayed to enhance glycerol concen...
